Cowboy (Rib) Steak

Known by a few names, the Cowboy or rib steak is a tender, flavorful, bone-in cut of beef taken from the rib primal of the cow. It is essentially a boneless ribeye steak with the rib bone still attached. Cowboy steaks are prized for their high degree of marbling, the intramuscular fat that melts during cooking to create a juicy, tender, and rich steak.
